WHAT MAKES LATE HARVEST AVOCADOS SO DELICIOUS?
In order to answer this question we need to use an analogous plant, like coffee. So what do tropical coffee and avocados have in common? Specialty arabica coffee varieties like bourbon were created by selecting superior flavored varieties over time that were often more tolerant of cool weather. Farmers noticed that colder weather produced more unique notes in their beans. So what's up with cool weather? Well, mild, cool weather stresses plants and also allows fruit to stay on the tree for longer. This in turn prolongs the development of secondary compounds and oils, AKA flavor! Hass avocados are no different. This fruit, like its caffeinated counterpart, is originally from the tropics, and was slowly adapted to colder weather at higher elevations. Traceland avocados stay on the tree for between 14 to 20 months, slowly acquiring the unique richness that this confluence of time and cool climate provide. They also boast a high fat and oil content and a formidable creamy texture. Just one of the perks of growing at 35 degrees North latitude!
